Jackfruit Golden Kraut Sandwich with Blue Mayo
Our dear friend Jason from @theindigokitchen has created this super delicious and simple Jack fruit sandwich full of fiber (jack fruit/vegetables) and alive bacteria (golden kraut). Make your next Sandwich as colorful as this one with a few simple ingredients and enjoy your gut-friendly snack. May spring come :)
Jackfruit Golden Kraut Sandwich with Blue Mayo

- Cut your sourdough bread in finger thick slices, drizzle olive oil on it and fry in a hot pan for a few seconds crispy on both sides (alternative use a toaster without oil)
- Take the young green jack fruit and pull pieces apart. Marinate with a BBQ herb mix or BBQ sauce and 1 tbsp olive oil of your choice. Bake in the oven for 10 minutes at 180 degrees
- Add mayo, 1 tbsp spirulina powder, salt/pepper, 1/2 tbsp nutritional yeast, 1 tbsp lemon juice into a bowl and mix well
- Top Sandwich with spirulina mayo, golden kraut, jack fruit, tomato slices, lettuce slices and one last small layer of vegan mayo (white)
- Crispy crunchy bread slice on top and enjoy with a glass of kombucha
