Sweet Potato Wedges with Golden Kraut

Less is more! Let’s celebrate this Kings Day staying nourished and healthy and not forgetting about orange colour! Sometime roasted sweet potatoes with delicious herb pesto and portion of kraut, a healthy natural probiotic, is exactly what you need! Bring some colours into your life that will uplift your mood and feed your mind, body and soul! Enjoy! 

 

INGREDIENTS 

  • Sweet potato
  • Olive oil 
  • Salt
  • Walnuts
  • Black sesame seeds 
  • Fresh parsley
  • Golden kraut 
  • Parsley pesto 

    Parsley pesto recipe:

    • Fresh Parsley
    • Walnuts
    • Olive oil
    • Salt
    • Nigella seeds
    • Nutritional yeast
    • Squeezed lemon

     

    TIPS:

    *For extra flavour you can use roasted walnuts and add a clove of garlic if you are a fan 

    *You can always substitute nigella seeds with a pinch of black pepper or just skip it 

     

    STEPS:

    • Preheat the oven (200 C) and cut sweet potatoes into wedges. Place them on the baking tray, drizzle some olive oil, add some salt and roast them for approximately 30min until soft
    • Meanwhile prepare pesto by blending parsley with walnuts, nutritional yeast, salt, nigella seeds, squeezed lemon and some water. Then add olive oil and blend in again for a few seconds. 
    • Once sweet potatoes are ready top them with fresh parsley, black sesame seeds and golden kraut and serve with delicious pesto on the side
