Sweet Potato Wedges with Golden Kraut
Less is more! Let’s celebrate this Kings Day staying nourished and healthy and not forgetting about orange colour! Sometime roasted sweet potatoes with delicious herb pesto and portion of kraut, a healthy natural probiotic, is exactly what you need! Parsley pesto recipe:
*For extra flavour you can use roasted walnuts and add a clove of garlic if you are a fan
*You can always substitute nigella seeds with a pinch of black pepper or just skip it
- Preheat the oven (200 C) and cut sweet potatoes into wedges. Place them on the baking tray, drizzle some olive oil, add some salt and roast them for approximately 30min until soft
- Meanwhile prepare pesto by blending parsley with walnuts, nutritional yeast, salt, nigella seeds, squeezed lemon and some water. Then add olive oil and blend in again for a few seconds.
- Once sweet potatoes are ready top them with fresh parsley, black sesame seeds and golden kraut and serve with delicious pesto on the side
