Purple Kraut Nourish Bowl

Nourish bowls are one of the easiest meal ideas and probably one of the most colourful and nutritious. Balance your plate with different flavours, colours and nutrients choosing your favourite ingredients or the ones that you have currently in the kitchen. You can also use some leftovers and create zero waste meal! Try to include your proteins, carbohydrates, oils, veggies, greens, and don't forget about fermented food being a great source of natural probiotic and vitamins. It is a mush have of a great nourish bowl!

 INGREDIENTS:
  • Black rice
  • Avocado
  • Lettuce
  • Broccoli
  • Fresh dill and parsley
  • Mung bean sprouts
  • Purple rain kraut
  • Black and white sesame seeds
  • Roasted pumpkin seeds
  • Lemon juice
  • Sesame oil
  • Tamari or soy sauce

    STEPS:

    • Cook the rice with some salt and a bit of oil to avoid stickiness 
    • Reheat the pan with some sesame oil and blanch brocoli florets for a few minutes adding at the very end tamari 
    • Prepare avocado and lettuce and chop dill and parsley
    • Place everything in a bowl and top with sprouts, roasted pumpkin seeds and sesame seeds

    *You can soak the rice overnight or for a few hours before cooking for the better digestion and shorter cooking time 

    *You can always swap fresh herbs for the ones you like the most as well as the lettuce for the other greens like kale, spinach or rocket
