Vegan Reuben Sandwich – “Purple Rain edition”

This typical kosher-American dish is normally stuffed with corned beef, sauerkraut, Swiss cheese, and Russian sauce. So actually, quite intercultural/intercontinental dish. Food unites especially in times when we can not physically unite that much. 

We changed the standard recipe towards a modern plant based approach with our tasty purple rain kraut. Better for the environment and better for your digestive system. 

  INGREDIENTS:
  • Reuben Toppings
    Mushrooms of choice (we use champions & porcini)
    2 hands full
    Olive oil
    splash for frying
    Thyme
    1 tbsp
    Salt
    1 pinch
    Black Pepper
    1 pinch
    Soy sauce
    1/2 tbsp
    Vegan Cheese (we used a smoked gauda version)
    2 slices
    Sauerkraut (we used purple Rain from SauerCrowd)
    1 Cup
    Wholegrain Toast
    4 slices
    Dill Pickles
    4 pickles medium sized
    Dill
    1/2 cup
    • Russian Dressing
    Vegan Mayonnaise
    1 Cup
    Vegan Worcestersauce (or soy)
    1 tbsp
    Siracha
    2 tbsp
    Horseradish paste
    1 tbsp
    Shallot diced
    1 medium

STEPS:

  • How you do it:

    1. Start with preparing the sauce: thinly dice the shallot and mix it with the rest o the ingredients of the Russian dressing until you get a salmon-colored sauce.
    2. Chop up the mushrooms, heat a splash of olive oil in a pan and add the mushrooms. Stir occasionally until the mushrooms release their water and slightly turn golden brown. Now, add the Thyme and spices at the end and set aside in a bowl.

    3. use the heated pan in order to toast the bread until golden brown.

    4. Spread a thin layer of Russian dressing on all 4 slices of bread. Then start layering the Reuben sandwich.

    Gently press the bread and slice it in half
