Lacto fermented carrots are a good source of antioxidants, they are bursting to the seams with essential vitamins and minerals. Filling but not fattening, fermented carrots contain just 31 calories per 100g; a handy snack to satisfy those pesky hunger attacks. We added ginger and fresh thyme to the recipe as well as our classic kraut juice as a starter to make the carrots more interesting for the crowd.
